It’s all about getting ourselves “back to the garden” of eating and going green.

Garden Fresh Restaurant Corp., parent company for Sweet Tomatoes and Souplantation restaurants, announced a 5.5 percent same store sales increase for January.

Its best sales month in more than six years!

You have been hearing farm-to-table for some time now. It’s a trend that is going to be around for long long time.

The farm to table movement is really just bringing us back a hundred years, before there was refrigerated rail cars and roadways made for transporting food long distances.

Farm-to-table also refers to a movement concerned with producing food locally and delivering that food to local consumers.

It is associated with organic farming initiatives, sustainable agriculture, and community-supported agriculture.

Farm-to-table restaurants may buy their produce directly from farmers, usually local. In a few cases, the restaurants and farms may be owned and operated by the same people.

Food safety, food freshness, food seasonality, and small-farm economics, has become part of a revolution, to eating healthier at home and dining at restaurants that are part of that movement as well.

Garden Fresh is in the midst of refreshing its restaurants and revitalizing its brand, encouraging its customers to “Discover Fresh,” a campaign focused on the restaurants’ farm-to-table food brand promise.

“Consumers want to know where their food is coming from,” said John Morberg, CEO of Garden Fresh Restaurant Corp. “We have been focused on farm-fresh food for decades, and authentically telling that story provides our guests with valuable insights so they can rest-assured our food is always of the highest-quality.”

As part of their strategy, Garden Fresh will be testing Farm Teams in the San Diego market. The Farm Teams are “brand ambassadors” who will interact with guests, speaking about Garden Fresh’s relationships with its farmers, where the food is coming from. Initially, there will be two teams, and they will rotate through the San Diego locations.

The key to offering local foods is flexibility.

You must be willing to change up the menu on a regular basis. You can do this easily by offering rotating local foods specials, to supplement your regular menu.

Here are are some reasons why you should open a farm-to-table restaurant.

Some areas offer Restaurant Supported Agriculture (RSAs) which are similar to a CSA (community supported agriculture) offering buying discounts and tangible benefits for your restaurant.

Local foods travel a fraction of distance and still maintain their appearance, taste and nutrients, without any bio-engineering (to keep them from withstanding travel over long distances) since customers eat with their eyes first food that looks fresh is going to taste good.

Adding terms like farm-fresh or locally grown to a menu description will definitely sell quicker and better.

~ Lets face it Local foods let you be more creative with your menu. Because local foods are based on the seasons, restaurants must rotate their menu items, based on availability, regardless where there coming from. And that’s a good thing. What better way to come up with daily specials, than looking at the ingredients in your own back yard.

~ Local foods aren’t as expensive as you think. While few small farms can compete with wholesale food distributors for steep discounts, their prices aren’t always that much higher.Take in consideration, the higher quality of produce you are really getting. More bang for your restaurant food cost buck.

~ Local foods protect the environment. Local foods are generally easier on the environment than large-scale farms. They use less energy for harvesting and transportation and many small farms are organic (but not all) and don’t use pesticides, hormones or other chemicals. Buying local foods is just one way that restaurants can advertise the are “going green.”
