At the start of the coronavirus, crisis consumers were interested in comfort foods, but there has been a trend toward healthy food options. On the retail side, the demand for healthy products seems to be on the rise, too.

Technomic a research firm most recent weekly Foodservice Monitor, said 32% of operators are promoting healthy foods, up from 30% the week before and 21% at the beginning of April.

Promoting wellness during the pandemic is surging.

Health-focused products and those that relieve stress and promote wellness will continue.

What does this mean if you are in the process of starting a restaurant during this virus?

I recommend you put choosing your cuisine at the top of the list of things to research!

From my years of working in and owning foodservice businesses, that regardless of the current atmosphere, your cuisine is the first thing to consider.

If you want to have any chance of making it, you have to offer your potential customers what they want to eat, and right now, it looks like the healthier better!

You do not have to be an all healthy or all-organic restaurant during this time, BUT you must offer healthier options.

The industry has been going in that direction. The pandemic and the virus have fueled the need more.

The grocery stores have been promoting healthy choices offering more and more organic foods and produce. New groceries are popping up in the market! Whole Foods, Trader Joes, and Fresh Market are moving into neighborhoods offering healthier options to consumers.
